"Kick the coffee, and sip some tea," is often our motto at Behind the Burner once 4 o'clock roles around. Now, our new favorite product is Kumsi's detox tea.

Founded in 1867 by P.M Kousmichoff, and established in Paris in 1917, this tea is now distributed world wide, offering gourmet exclusive blends and high quality traditional teas.

Although coming in a variety of flavors, the Detox is a blend of Matè and Chinese green tea. Upon opening the lid, scents of lemon grass fill the room. Rich in antioxidants without any caffeine side effects, we recommend making this tea mid afternoon to satisfy any unwanted cravings.

Tip: Mate, also known as cimarròn, is a South American infused drink made by steeping dried leaves of Yerba mate, or a type of holly, in hot water. Originally found in Argentina, Paraguay, Brazil, Chile, Syria, and Lebanon, Mate transforms Kusmi's Parisian tea into a worldwide delicacy.

Guayakí. Sounds like a foreign island near Fiji where I can go to get some peace of mind. But Guayakí is actually a South American Achè tribe that drinks yerba mate daily, calling it "the drink of the gods.&rdquo

With the caffeine of one cup of coffee, yerba mate is the new clean and green energy source. Unlike other yerba mate products, Guayakí partners with growers who grow it in the shade of the forest. Yerba's harvesting teams are instructed to carefully prune the yerba mate trees for the best quality and health of the tree for future harvests. Guayakí's mission is coming true daily, restoring 200,000 acres of rain forest and creating over 1,000 living wage jobs by 2020.

Not to be missed is the pomegranate blend. Immediately upon twisting its cap, strong herbal aromas of pomegranate tea leaves are revealed. Behind the Burner: Celebrating the Year of the Tiger with Tea

The Chinese New Year is one of the longest and most important events of the Lunar Calendar, and this 15-day festivity is definitely worth celebrating. Still looking for something to do? Try hosting a tea party (after all, tea was discovered in China) to celebrate 2010, the Year of the Tiger. The color red is said to scare away bad luck, while gold brings prosperity, so buy some festive decorations and invite your nearest and dearest over to toast the new year.

Sound like too much work? Don't sweat it, just head over to the Mandarin Hotel to celebrate the 8th day of Chinese New Year, the "Day of Luck" (and how fitting...oranges and tangerines are said to symbolize good luck). They'll be serving up authentic Chinese teas and traditional foods that are said to bring more than just great flavor. From the shiitake wontons (for a long life) to chilled lobster and banana sandwiches (which symbolize occupational success), this is the perfect celebration to kick off the start of a new year. And since no party is complete without music, the Mencius Society for the Arts will be providing entertainment with traditional Chinese New Year music.
