With the launch of KFC's Double Down Sandwich (if one could even call it a sandwich), chicken has been all the hype this week. This seems like an appropriate time to remind readers everywhere that you can enjoy breaded chicken without wrecking havoc on your arteries, which brings us to today's snack of the day: Brazil Nut Crusted Chicken Fingers.

Brazil nuts are flavorful sources of protein, fiber and vitamin E; and their creamy texture and nutty flavor make them the perfect crunchy topping for chicken fingers. If you don't like Brazil nuts, you can always substitute almonds or pecans, which work just as well. Tip: Serve these snacks with a heart-healthy honey mustard dipping sauce. Mix together 1/4 cup sour cream, 1/4 cup Dijon mustard, 3 tbsp. honey and 1/2 tsp. Worcestershire sauce.
