Wine of the Day: Wrath Rosé Saignée

Behind the Burner: Wine of the Day: Wrath Rosé Saignée

It's not just the clever name that has me hooked to Wrath Rosé Saignée, but a sweet world of flavor. Created and bottled by Wrath Wines in Soledad, CA, this sustainably farmed varietal is composed of 100% Pinot Noir grapes. Aged for six months in French oak barrels, Wrath Pinot Noir has a profound nose of red berry flavors including strawberries with hints of rhubarb.

The best part about Wrath? Its incredibly odd, slightly dark label which brings about memories of In Cold Blood scenes. The Edward Gorey like sketch of a house in the middle of nowhere makes the Rosé both beautiful and intriguing at the same time.

Tip: Enjoy this Rosé chilled with a delicious chèvre goat cheese, whole grain crackers and a dimming sunset view from your porch. Don't have a porch? Head to Bryant Park (or any drive-in) to take in a film during the summer months and enjoy a smooth glass of Wrath. No pun intended.

Wine of the Day: Mont-Ferrant Rosé Brut Cava

Behind the Burner: Wine of the Day: Mont-Ferrant Rosé Brut Cava

August is the month where any and all things are cause for celebration. Vacations are commencing (or ending), vows are said and glasses clinked for even the oddest of holidays, such as Elvis Presley Week. For those of us who love that Champagne feel but are not huge on the price tag, Cava is one of the next best, and delicious, choices.

Mont-Ferrant Rosé Brut Cava is a traditionally created Cava with a twist: its pink hue is a result of ideal weather conditions from May to October in the normally temperate Spain. Enjoyed well chilled, this Cava is affordable, has a distinctly silky texture and a pure bouquet. This bottle works perfectly for a late night get-together...even if said get-together happens to be you, the couch and a pile of awesome Blu-Rays.

Tip: Pair this intriguingly colored wine with Spanish small-plate tapas and a sweet film by Spanish director Isabel Coixet, The Secret Life of Words. This deep film works perfectly with the light, perky flavor of the Cava.

Wine of the Day: Xavier Flouret Nationale 7

Behind the Burner: Wine of the Day: Xavier Flouret Nationale 7

Rosé has always been a classic summer wine. With crisp, refreshing and fruity flavors, a good rosé can be hard to beat. But unfortunately, finding a good bottle is often difficult, and people often mistakenly end up with a bottle (or box) or disappointing White Zinfandel. This is why when we find a bottle we like, we stick with it.

Our Wine of the Day is Xavier Flouret's Nationale 7 Rosé. A classic Côtes de Provence, the wine is made from fruit ripened on 40-year old vines and aged in stainless steel tanks to give it a fresh, crisp flavor. Made from a blend of Grenache, Cinsault and Tibouren, the wine has clean floral aromas with a hint of minerality. On the palate, the wine has flavors of juicy red berries which are balanced out by soft citrus notes. We pair this wine with raw shellfish or soft cheeses, but it can also stand up to richer dishes like chicken or even foie gras. In any case, you can bet that this summer, we'll be drinking pink.

Drink of the Day: Rose Mint Julep

Behind the Burner: Drink of the Day: Rose Mint Julep

With the annual Kentucky Derby coming up tomorrow, we all have excuses to indulge in some down home Southern cooking, and of course, cocktails. Those at the race tracks in Louisville will probably be sipping classic mint juleps in pewter cups, but we thought we'd put a Southern ladylike twist on our version by sweetening it up with rosewater-infused simple syrup. Technique: Remember, this isn't a mojito, so don't muddle the mint (it should just be infused in the simple syrup).

Break out your Sunday hats, best Kentucky bourbon and get ready to watch the action at Churchill Downs with a Rose Mint Julep.

INGREDIENTS:
2 tbsp. water
2 tbsp. sugar
1/2 tsp. rosewater
20 mint leaves
3 oz. bourbon

PREPARATION:
1. In a small sauce pan, prepare simple syrup by heating water, sugar, rosewater and mint leaves until sugar dissolves. Remove pan from heat and let cool.

2. Once simple syrup has cooled, place it in a shaker filled with ice and bourbon. Shake vigorously.

3. Pour drink over a glass filled with crushed ice. Garnish with mint sprig and rose petals.
