Behind the Burner: Yogurt Marinated Chicken Thighs by Calvin Pace

Makes 4 servings

INGREDIENTS:

1 cup plain Greek style yogurt
3 tbsp. extra virgin olive oil
2 tbsp. red wine vinegar
2 tbsp. tomato paste
2 tsp. kosher salt
6 garlic cloves peeled and flattened
2 1/4 lb. boneless skinless chicken thighs
1 1/2 tbsp. of Hungarian sweet paprika and crushed red pepper

PREPARATION:

1. Combine Greek yogurt, red wine vinegar,tomato paste, garlic, paprika and red pepper in a large mixing bowl.

2. Add the boneless skinless chicken thighs and coat them generously. Let it sit for at least an hour.

3. Preheat the grill to medium. Use the olive oil to coat the grill so the chicken doesn't stick.

4. Cook for 5-6 minutes on each side.
