Yellow Watermelon and Tuna Salad by Divya Gugnani

Makes 4 servings

INGREDIENTS:

1/4 lb. sashimi grade yellow fin tuna, sliced
2 Cups yellow watermelon, cubed
1/2 lb. fresh mozzarella, cubed
1 Cup baby arugula
aged balsamic vinegar
extra-virgin olive oil

PREPARATION:

1. Thinly slice the tuna sashimi style.

2. Gently combine tuna, watermelon, fresh mozzarella.

3. Serve over baby arugula and dress with aged balsamic and extra virgin olive oil.
