Warm Carrot Salad by Divya Gugnani

Makes 2 servings

INGREDIENTS:

1 small red onion, sliced
1 small can of garbanzo beans, drained and rinsed
olive oil
4 large carrots, shaved (with peeler)
2 garlic cloves, smashed
2 Tablespoons pine nuts
white wine vinegar
1 Tablespoon parsley
salt and pepper to taste

PREPARATION:

1. In a frying pan, saute red onion and garbanzo beans until cooked through. About 6-7 minutes.

2. Add the carrots, garlic and pine nuts. Cook till nuts are toasted.

3. Drizzle with white wine vinegar, salt and pepper to taste.

Garnish with parsley and enjoy.
