Vegetable Cheeseburger by Divya Gugnani

Makes 6 servings
INGREDIENTS:
1 1/2 pounds ground beef
6 slices Cheddar cheese
1 large red yellow bell pepper
1 medium red onion, sliced thin
1 large tomato, sliced thin
salt and pepper to taste
Lettuce
6 hamburger buns
PREPARATION:
1. Shape beef into 12 thin burgers
2. Top each with a slice of cheddar cheese, yellow pepper strips and a slice of onion, tomato and Swiss cheese
3. Top each with another patty, lettuce and seal edges, season with salt and pepper
4. Broil, grill or pan-fry burgers until beef loses its pink color
5. Serve on hamburger buns
