Vanilla Pumpkin Pie by Divya Gugnani

INGREDIENTS:
1 lg. pkg. vanilla pudding mix
3 tbsp. sugar
1 tsp. pumpkin pie spice
1 (13 oz.) can evaporated milk
1 egg, slightly beaten
1 cup canned pumpkin
Baked 9" (deep) pie shell, cooled
1 Container whipped topping
PREPARATION:
1. Combine all ingredients (pudding, sugar, spices, egg, evaporated milk, canned pumpkin).
2. Cook in saucepan over medium heat, stirring until mixture comes to a full rolling boil.
3. Remove from heat. Cool for approximately 5 minutes, stirring twice.
4. Pour into shell.
5. Chill for at least 4 hours. Serve with whipped topping
