Tomato Peach Salad by Divya Gugnani

Makes 2 servings

INGREDIENTS:

3 peaches, sliced 1 inch thick
2 medium tomatoes, sliced
2 Tablespoons fresh basil, chopped
salt and pepper to taste
apple cider vinegar to taste
sugar to taste
olive oil to finish

PREPARATION:

1. Combine peaches, tomatoes, and 1 tablespoon of basil in a mixing bowl, coat with cider vinegar, olive oil, and salt and pepper to taste.

2. Garnish with the remaining basil and a light sprinkle of sugar.

Serve and enjoy!
