The Sweetest Banana Bread by Divya Gugnani

Makes 28 servings
INGREDIENTS:
3 and 1/4 cup white granulated sugar
1 teaspoon ground cinnamon
3/4 cup butter
3 eggs
6 ripe and soft bananas, mashed with a fork
1 (16 ounce) container sour cream ( you can opt for light sour cream)
2 teaspoons vanilla essence
2 teaspoons ground cinnamon
1/2 teaspoon salt
3 teaspoons baking soda
4 1/2 cups all-purpose flour
1 cup chopped walnuts (optional)
PREPARATION:
1. Preheat oven to 325 degrees F.
2. Grease four 7x3 inch loaf pans.
3. In a small bowl, make a dry mixture of sugar and only of 1 of the 2 teaspoons of cinnamon. Dust pans lightly with cinnamon and sugar mixture.
4. In a larger bowl, gently cream butter and 3 cups remaining sugar. Mix in eggs, mashed bananas, sour cream, vanilla and cinnamon. Mix in salt, baking soda and flour. Stir in walnuts. Divide into prepared pans.
5. Bake for approximately hour, until a knife inserted in center comes out clean.
Cool for 5 minutes and slice. Serve with vanilla ice cream.
