Behind the Burner: The Rum Service Cocktail

Makes 1 serving

INGREDIENTS:

1 1/2 oz. spiced rum
2 oz. pear nectar
1/2 oz. lemongrass simple syrup
1/4 oz. liquefied honey
1 pinch ground sandalwood
Dash vanilla vodka
Lime slice for garnish

PREPARATION:

1. In a cocktail shaker filled with ice, combine the rum, pear nectar, lemongrass simple syrup, honey, sandalwood and vodka.

2. Shake vigorously for 15-20 seconds. Fill a rocks glass with ice, then strain the drink into the glass.

3. Cut the rind off a circular slice of fresh lime to make a square. Garnish the cocktail and serve.
