Behind the Burner: The Pear Tree by Ektoras Binikos, Oceana

Makes 1 serving

INGREDIENTS:

2 oz Grey Goose pear vodka
1/2 oz Cointreau
1/2 oz elderflower cordial
2 cardamom seeds
2 dashes orange bitters
1/4 oz egg whites
3 slices of fresh pear or 1oz of fresh pear purée
1 oz lemon juice

PREPARATION:

1. Muddle the pear slices with bitters, elderflower and cardamom.
2. Add the rest of the ingredients and shake with ice.
3. Double-strain into a coup glass.
4. Grate a small amount of cinnamon on top to garnish.
