Behind the Burner: The Ostrich Bistro Burger by Fossil Farms

Makes 1 serving

INGREDIENTS:

7 oz. ostrich, ground
1 onion roll
1 1/2 tbsp. olive oil
2 leaves of bibb lettuce
1 tbsp. purple onion, julienned
1-2 slices Monterey jack cheese
pepper to taste
whole grain mustard to taste

PREPARATION:

1. Grill the ostrich patty is olive oil for 2-3 minutes per side. Allow it to rest one minute. Place the burger on onion roll bottom.

2. Layer on Monterey jack cheese, fresh ground pepper, whole grain mustard, bibb lettuce and onion.

Top the burger and enjoy!
