Behind the Burner: The Horatio by Mixologist Peter Harrison

Makes 1 serving

INGREDIENTS:

3/4 oz. bourbon
3/4 oz. lemon juice
3/4 oz. simple syrup
Red wine, to finish (such as Grenache or an Italian table wine)



PREPARATION:

1. Fill a cocktail shaker with ice. Add bourbon, lemon juice, simple syrup.

2. Shake vigorously and strain into a glass filled with fresh ice.

3. Using a bar spoon, pour red wine over spoon into the glass to top of the glass. Serve.

The sugar will allow the wine to float creating a distinct layer on the surface of the drink.
