Behind the Burner: Swiss and Bacon Breakfast Quiche by Divya Gugnani

Makes 8 servings

INGREDIENTS:

9-inch pastry shell
8 strips of bacon
1 sliced red onion
1 1/2 cup Swiss cheese
1/2 cup sliced mushrooms
2-3 eggs
1 1/2 cup light cream
3/4 tsp. salt
Cayenne pepper
Cracked black pepper
1/2 cup chicken, chopped

PREPARATION:

1. Fry bacon until crisp. Saute onions in with the bacon. Cover bottom of a partially-baked pastry shell with bacon crumbs and sauteed onions. Add 1/4 cup Swiss cheese.

2. Add beaten eggs, cream and spice mixture. Add in mushrooms. Top with remainder of cheese. Bake 35-40 minutes at 375.
