Summer Key Lime Pie by Divya Gugnani

Makes 8 servings

INGREDIENTS:

1 (14-oz.) can of fat-free sweetened condensed milk
2 eggs (or 4 tbsp of cornstarch as egg substitute)
1/2 cup fresh lime juice
2 tsp. grated lime rind (about 2 limes)
1 (6-oz.) reduced-fat graham cracker crust
1 (8-oz.) container fat-free cool whip

PREPARATION:

1. Mix first 4 ingredients in a blender until smooth.

2. Pour mixture into the graham cracker crust.

3. Bake at 350° for 10 to 12 minutes or until golden.

4 Allow pie to cool completely, and top with whipped topping.

Recipe is also good without the alcohol, if you prefer.
