Summer Berry Jumble by Divya Gugnani
Makes 4 servings
INGREDIENTS:
2 cup fresh raspberries
1 1/2 cups fresh blackberries
2 cups quartered fresh strawberries
2 cups fresh blueberries
1/3 cup sugar
1 tsp. vanilla extract
1 tablespoon grated lemon rind
2 tablespoons fresh lemon juice
3 tbsp. Limoncello (lemon-flavored liqueur)
1/2 cup torn mint leaves
PREPARATION:
1. Combine first 8 ingredients in a bowl and let stand 20 minutes.
2. Gently stir in mint using a rubber spatula.
