Behind the Burner: Spicy Tomato Cod Soup by Divya Gugnani

INGREDIENTS:

1 can diced tomatoes, undrained
1 can tomato sauce
1/2 c. chopped yellow onion
1/2 tsp. minced garlic
1/2 tsp. celery salt
1/4 tsp. dried thyme
1/4 tsp. cayenne pepper
2 bay leaves
1 package frozen mixed vegetables
1 lb fresh or frozen cod, cut into 1 inch pieces

PREPARATION:

1. In a soup kettle, combine the first eight ingredients; cover and simmer for 10 minutes.

2. Add vegetables; cover and simmer for 10 minutes. Add fish; cover and simmer for 8-10 minutes or until the fish flakes easily with a fork. Discard the bay leaves.
