Spicy Lamb Chops by Divya Gugnani
Makes 4 servings
INGREDIENTS:
1/2 teaspoon ground cumin
1/4 teaspoon ground cardamom
1/4 teaspoon freshly ground pepper
1/4 teaspoon ground ginger
1/4 teaspoon cayenne pepper
1/4 teaspoon cinnamon
Kosher salt
3 garlic cloves, finely minced
8 lamb rib chops (approx. 2 pounds)
2 tablespoons vegetable oil
1 tablespoon mint, chopped
PREPARATION:
1. In a small bowl, mix the spices with 1 1/2 teaspoons of kosher salt. Rub the garlic all over the lamb chops, and then sprinkle them with the spice mixture.
2. Heat the vegetable oil in a large skillet. Over moderately high heat, add the lamb chops turning once, cooking for about 3 minutes on each side, for medium-rare.
Plating: Transfer the chops to plates, garnish with the mint and serve. Enjoy with a crisp salad.
