Behind the Burner: Spicy Cocktail Peanuts by Divya Gugnani

Makes 8 servings

INGREDIENTS:

2 cups of lightly-salted peanuts
2 tbsp. chili powder
1/2 tsp. curry powder
1 tbsp. peanut oil
3 small dried chili peppers
1/2 tbsp. salt

PREPARATION:

1. Pre heat Oven to 350 degrees.

2. Place peanuts in shallow, hot pan for 5 minutes, shaking pan gently to avoid burning. Remove pan from oven once nuts are toasted.

3. Add chili powder, curry powder, dried peppers and oil. Mix well to coat peanuts evenly.

4. Return pan to oven for 5 to 7 minutes. Remove from oven, add the dash of salt, shake nuts. Pour in a bowl and remove dried chilies. Serve either warm or room temp.
