Behind the Burner: Scallop Marinato by Chef Jim Botsacos

Makes 6 servings

INGREDIENTS:

5-6 U-10 Sea Scallops, well chilled
1 cup lemon juice
1 red onion, peeled and thinly sliced
4-6 slices fresno chiles
1/4 cup orange juice
1/4 cup cucumbers, peeled, seeded and finely diced
1 tbsp. capers
1 tbsp. Lesvos basil
2 tbsp. scallions, finely sliced
kosher salt and pepper to taste
pinch of sugar
2 tbsp. of extra virgin olive oil

PREPARATION:

1. Thinly slice the scallops into rounds (each scallop should yield 4-5 rounds, approximately 2 oz. per person) creating a circle about 1/8 an inch thick.

2. Place the scallops into a well-chilled stainless steel mixing bowl, top with lemon juice and a pinch of salt. Add red onions and frenso chiles to the bowl. Gently toss to incorporate the ingredients and let sit 1 to 2 minutes. Add the orange juice and a pinch of sugar.

3. Divide the marinade amongst six chilled serving bowls. Sprinkle the remaining ingredients, cucumber, capers, Lesvos basil and scallions over marinated scallops. Drizzle a small amount of extra virgin olive oil on the top of each serving bowl. Garnish with sprig of Lesvos basil.

Where can i purchase the shell for the right presentation ?

You can purchase sea shells at alot of online stores like Naples Sea Shell Company or from many craft stores. If you live by a beach, skip the purchase and find your own. It might look more personal!

Sounds delicious, but basically it is just seviche. Try any fish of your liking. maybe halibut or cod. Also you can find china scallop shells in many stores that sell china.
