Roasted Red Pepper and Tomato Salad by Divya Gugnani

INGREDIENTS:

4 Roasted red peppers, sliced
1/4 Cup toasted chopped walnuts
1 oz. crumbled goat cheese
5 basil leaves, rough chop
3 roasted tomatoes, rough chop
olive oil
red wine vinegar
salt and pepper to taste

PREPARATION:

1. Combine peppers, walnuts, cheese, basil and tomatoes.

2. Combine olive oil, vinegar and salt and pepper to taste for dressing.

Serve immediately.
