Red Relish by Divya Gugnani

Makes 12 ( 2 cups) servings

INGREDIENTS:

1 1/2 cups dried maraschino cherries
1/2 cup red wine vinegar
1/4 cup balsamic vinegar
2 tbs. olive oil
1 cup chopped yellow Spanish Sweet onion
2 tbs granulated sugar
Salt and pepper to taste

PREPARATION:

1.In a medium bowl, combine cherries and both vinegars.
2.Let soak for 30 minutes.
3.Heat oil in a large skillet.
4. Add onion; cook 5 minutes or until onion is soft. Add sugar;mix well.
5. Add cherries with soaking liquid; stir to thoroughly combine ingredients.
6.Cook, uncovered until almost all the liquid is evaporated.
7.Season with salt and pepper.
8.Serve at room temperature.
