Behind the Burner: Raspberry Mojito  by  Le Caprice of New York

Makes 1 serving

INGREDIENTS:

2 oz. white rum
1/2 oz. fresh lime juice
1/4 cup simple syrup
1 sprig fresh mint
1/4 cup fresh raspberries is recommended, but a purée may be used
1/2 cup Sprite

PREPARATION:

1. Muddle the lime juice, mint, raspberries and simple syrup in a highball.
2. Fill with crushed ice.
3. Pour in rum and add Sprite.
