Behind the Burner: Quail Mediterranean by D'Artagnan

Makes 4 servings

INGREDIENTS:

4 boneless quail for an appetizer or
8 boneless quail as main course
1 lemon
Garlic, minced
Extra virgin olive oil
Fresh Rosemary & thyme
salt & pepper

PREPARATION:

1. Heat grill or broiler. Rub quail on both sides with lemon, olive oil and garlic.

2. Season with rosemary, thyme, salt & pepper. Cook for 2 minutes per side over flame. Move away from flame, cover and cook for 3 minutes.

3. Serve with grilled vegetables (marinated with the same seasonings) and couscous.
