Behind the Burner: Prosciutto Wrapped Figs with Gorgonzola by Divya Gugnani

Makes 4-6 servings

INGREDIENTS:

9 large fresh black Mission figs, stemmed, halved
3 oz. thinly sliced prosciutto
3 tbsp. Gorgonzola cheese
9 large walnut pieces, toasted
1 tbsp. extra virgin olive oil
Salt and freshly ground pepper to taste

PREPARATION:

1. Preheat broiler to 500 degrees F and cover a baking sheet with aluminum foil.

2. Place the figs on the baking sheet and drizzle with the olive oil. Bake for 5 minutes, or until tops have lightly caramelized.

3. Remove the figs and allow to cool slightly. Top each fig with a small spoonful of the Gorgonzola cheese and 1 walnut piece, then wrap in the prosciutto.

4. Lightly season with salt and pepper, then serve warm or at room temperature.
