Poussin for the Grill by D'Artagnan
Makes 2 servings
INGREDIENTS:
4 fresh Poussins, whole or boneless
Provence marinade:
4 tablespoons balsamic vinegar
4 tablespoons herbes de provence - or your favorite herbs, chopped
1 tablespoons olive oil
2 tablespoons cracked black peppercorns
Ginger marinade:
4 tablespoons rice wine vinegar
2 tablespoons freshly grated ginger
2 tablespoons soy sauce
2 tablespoons cracked black peppercorns
1 tablespoon sesame oil
PREPARATION:
1. Combine all ingredients to make marinade.
2. Marinade poussins for at least 4 hours on each side in refrigerator.
3. Heat grill or broiler.
4. Remove from marinade. For the Provence marinade, season Poussins with Kosher salt before cooking.
5. Grill or broil for 6 minutes (or until done) on each side.
Serve with grilled vegetables (they can be marinaded in the same marinade) and your favorite cooked rice or pasta.
