Behind the Burner: Phoenix Cocktail by Divya Gugnani

Makes 8 servings

INGREDIENTS:

1 can lychee nuts packed in syrup
1 stalk lemongrass
1 liter bottle premium vodka
2 Cups fresh orange juice (no pulp)
1 Cup black currant nectar
1 orange, for 8 orange rinds

PREPARATION:

1. Slice lemongrass lengthwise and bruise to release the oils.

2. Pour vodka into a pitcher and add lychee nuts and lemongrass. Chill vodka pitcher and martini glasses in the refrigerator.

3. Pack martini shaker with ice and pour approx. 1/2 cup of vodka over ice.

4. Strain into chilled martini glass.

5. In center of glass, slowly pour 1/4 cup fresh orange juice. You should see a layering effect.

6. Slowly pour 1/8 cup black currant nectar into center of glass. You should have 3 distinct layers, black, orange and clear at the top.

7. Peel 8 long orange rinds. Garnish with rinds and serve.
