Perfect Picnic Coleslaw by Divya Gugnani

Makes 8 servings
INGREDIENTS:
1 medium head cabbage, shredded
1 large carrot, shredded
1 medium sweet red pepper, diced
1 medium onion, finely chopped
1/4 cup sliced green onions
1/4 cup chopped fresh parsley
DRESSING:
1/2 cup milk
1/2 cup mayonnaise
2 tbsp. sugar
2 tbsp. lemon juice
1 tbsp. red wine vinegar
1/2 tsp. salt
1/2 tsp. poppy seeds
1/2 tsp. fresh cracked pepper
PREPARATION:
1. Combine the first six ingredients in a large bowl. Combine dressing ingredients in a blender and blend until smooth. Pour over vegetables and toss to evenly coat. Cover and refrigerate overnight. Stir and mix coleslaw before serving.
