Peppered Poire Cocktail by Kara Newman

Makes 1 serving
INGREDIENTS:
For the simple syrup:
1/4 cup black peppercorns
1/4 teaspoon red pepper flakes
1 cup water
1 cup granulated sugar
1 oz. gin
1/2 oz. Poire William or similar pear flavored liqueur
1/4 oz. fresh Bartlett pear purée
1/2 oz. black pepper simple syrup
Sparkling wine
PREPARATION:
1. To make the simple syrup, place a saucepan over medium-high heat. Add the peppercorns and red pepper flakes and toast for 30 seconds, shaking the pan to prevent burning. Let cool slightly, then reduce the heat to medium-low and add the water and sugar. Simmer until the sugar dissolves and allow to cool. Strain into a container and discard the solids.
2. To assemble the cocktail, add the gin, Poire William, pear purée and simple syrup to a cocktail shaker. Add ice and shake well.
3. Strain contents into a champagne flute and top with sparkling wine. Float 2 or 3 peppercorns on top as a garnish.
