Behind the Burner: Orange-Infused Flan by Chef Saul Flores

INGREDIENTS:

2 cups sugar for caramel
3 cups milk
2 cups heavy cream
1 can sweet condensed milk
6 egg yolks
6 whole eggs
1 teaspoon corn starch
1/2 cup orange juice
1 tablespoon vanilla extract

PREPARATION:

1. Cook on high and heat sugar and 1/3 cup water till it forms dark amber caramel.

2. Pour caramel on to 9 inch round pan; let cool.

3. Combine rest of ingredients and blend for 30 seconds; skim off foam and pour in to pan over caramel.

4. Cook in water bath for 55 minutes. Let cool completely then run knife around edge and flip carefully on to serving plate.
