Behind the Burner: Mozzarella Cheeseburger with Pesto Mayonnaise by Divya Gugnani

Makes 4 servings

INGREDIENTS:

2 pounds ground sirloin
2 cloves garlic, finely minced
Salt and pepper, to taste
4 slices buffalo mozzarella, fresh
4 slices tomato
4 hamburger buns, split

For the Mayonnaise:

1 cup mayonnaise
1/2 cup prepared basil pesto
Salt, to taste

PREPARATION:

1. Preheat grill for high heat.

2. In a large mixing bowl, combine ground sirloin, garlic, salt and pepper. Form meat into 4 large burger patties. Set aside.

3. In a small bowl, mix together mayonnaise, pesto, and salt.

4. On the high grill, cook burgers 5 minutes on each side for a medium burger. Top each burger with a slice of buffalo mozzarella until melted.

5. Place cooked burgers on hamburger bun with tomato slices.
