Mountaineer Stew by Fossil Farms
Makes 20 servings
INGREDIENTS:
10 lbs. Wild Boar BRT Leg Unrolled, Trimmed, (Cut into Spoon Size Pieces)
10 lbs. Buffalo Top Round Trimmed, (Cut Spoon Sized)
5 lbs. Red Blys Potato, Scooped into Balls
1/2 head of celery, diced
2 lbs. carrots, peeled, cut into wheels or half-moons
1 medium onion, peeled, diced
1 10-lb.can whole peeled tomato crushed with juices
1 pint Irish Stout
1 quart demi-glace/beefstock
PREPARATION:
1. Flour and sear meat in a large sauce pan; remove from pan.
2. Sauté onion, celery, carrot, potato, for 3-5 minutes; add tomato product, then stout, simmer 10 minutes.
3. Add demi-glace, bring to a boil, turn to simmer, and simmer 25-30 minutes, and adjust seasonings.
