Meatless Mac by Divya Gugnani

INGREDIENTS:
2 c. macaroni
1 small onion, chopped
3 tbsp. unsalted butter
2 c. green peppers, chopped
1 c. tomatoes
1 c. grated low-cal sharp cheddar
1 tsp. sage
1 tsp. salt
1 tsp. pepper
PREPARATION:
1. Cook macaroni until tender.
2. Partly cook onion in butter. Add green pepper and tomatoes. Cook for 15 minutes.
3. Add cheese, sage, salt, and pepper to veggie mixture.
4. Blend sauce into macaroni. Bake in casserole dish for 30 minutes.
