Behind the Burner: Mashed Cauliflower by Divya Gugnani

Makes 4 servings

INGREDIENTS:

1 head of cauliflower
1 tablespoon light cream cheese
1/4 cup grated Parmesan or Grana Padano
1/2 teaspoon minced garlic
2 teaspoons chicken stock
2 tablespoons unsalted butter
salt and pepper to taste

PREPARATION:

1. Boil water in a stockpot.

2. Wash and cut your cauliflower into pieces.

3. Cook the cauliflower in boiling water for about 6 minutes or until it is well done.

4. Drain the cauliflower in a colander and pat the excess moisture dry with paper towels.

5. Puree the hot cauliflower with the cream cheese, Parmesan or Grana Padano, garlic, chicken stock, salt and pepper until the mixture is almost smooth.

6. Whisk in the butter and serve.
