Lobster Salad with Spicy Citrus Dressing by Divya Gugnani
Makes 4 servings
INGREDIENTS:
Spicy Citrus Dressing:
1/4 Cup lemon juice
1 Tablespoon plus 2 teaspoons soy sauce (low sodium)
1/2 teaspoon fresh garlic, finely minced
1/4 teaspoon Siracha hot sauce
4 Tablespoons plus 2 teaspoons grapeseed oil
1/3 teaspoon Kosher sea salt
freshly ground black pepper to taste
Lobster Salad:
1 fresh lobster
canola oil for deep-frying
2 cloves fresh garlic, thinly sliced
5 shiitake mushrooms, washed, patted dry with stems removed
Kosher sea salt 3 oz. assorted salad greens
PREPARATION:
1. For the dressing, mix all the ingredients except the oil. When the salt is totally incorporated then add oil and whisk.
2. Lobster salad: Keep a bowl of Ice water ready. Then in a large saucepan of salted boiling water (enough to cover the lobster) poach the lobster over high heat for 3 to 4 minutes.
a. Remove and place in to ice water.
b. Remove the shells and slice into clean nice pieces. Reserve.
c. Heat oil and fry garlic slices until crisp.
d. Lightly grill the mushroom.
Plating: Place the salad greens, mushrooms, and lobster on a serving dish. Dress with Spicy Citrus dressing over all and decorate with the fried garlic.
