Lentil Loving Burgers

Makes 4-6 servings
INGREDIENTS:
1 cup dry brown lentils
1/2 clove of garlic
1/2 cup olive oil
2 1/2 cups water
1/4 cup skim milk
1 cup wheat and barley nugget cereal
1 cup of dry onion soup mix
1 tsp. poultry seasoning
2 eggs, beaten
1 cup almonds
1 cup seasoned bread crumbs
2 tbs.vegetable oil
PREPARATION:
1. Saute garlic and 1 tsp. of oil in a saucepan.
2. Place lentils and water in a saucepan, and bring to a boil.Add salt to taste and 1/2 tsp. pepper. Cover, reduce heat to low, and simmer until tender.
2. In a large bowl, mix together the cooked lentils, skim milk, wheat and barley cereal, eggs and almonds.
3. Season with onion soup mix and poultry seasoning. Mix well using your hands, as the mixture will be very thick. Let stand for 30 minutes.
3. Heat oil in a large skillet over medium heat. Use an ice cream scoop or hands to portion out balls of the lentil mixture.
4. Place the scoops into bread crumbs, and coat while flattening into patties.
5. Fry burgers until brown on both sides, about 5 minutes per side, depending on the thickness of the patties.
6> Garnish with lettuce tomato and preferred bun.
