Behind the Burner: Lasagna Roll Ups by Divya Gugnani

INGREDIENTS:

1 can of spaghetti sauce
1 tsp. of oregano
1/4 cup dried basil
1/2 clove of minced garlic
1 tsp. crushed chili pepper
3 cups shredded chopped cooked chicken breast
2 cups of grated mozzarella cheese
1/2 cup of grated Parmesan cheese
2 eggs, beaten
12 lasagna noodles, cooked, rinsed and drained

PREPARATION:

1. Mix the first 3 ingredients; combine 1/2 cup with chicken, 1 cup mozzarella, Parmesan and eggs. Spread 1/4 cup onto each noodle; roll up.

2. Spread 1/2 cup of the remaining sauce mixture onto bottom of medium baking dish; cover with lasagna rolls (seam-sides down), remaining sauce mixture and mozzarella.

3. Bake 25 min. or until heated through.

4. Assemble roll-ups as directed: Place 6 roll-ups, seam-sides down, in each of 2 (9-inch) square baking dishes; top with remaining sauce mixture and mozzarella. Cover with foil.

5.When ready to serve, heat oven to 375 degrees F. Remove the casserole from plastic bag. Do not remove foil.

6. Bake 1 hour or until heated through. (No need to thaw before baking.)
