Behind the Burner: La Boqueria Sour by Greg Seider

Makes 1 serving

INGREDIENTS:

1 oz. Havana Club rum
1 oz. Spanish brandy
2 figs
1 oz. lemon juice
3/4 oz. agave syrup
Egg white
Sprinkled paprika

PREPARATION:

1. Muddle figs in cocktail shaker, then add the rest of the ingredients (except paprika) and dry shake with no ice.

2. Fill the shaker with ice, then shake vigorously for 15-20 seconds.

3. Double strain into a chilled martini glass, garnish with ground smoked paprika and serve.
