Kick in the Pants Egg Salad by Divya Gugnani

INGREDIENTS:
12 hard boiled eggs, peeled and chopped fine
3/4 c.light mayonnaise
3 tbsp. spicy Dijon mustard
2 tbsp. prepared horseradish
1 tbsp. chopped red onion
1/4 c. cooked lean bacon, crumbled
salt and pepper to taste
PREPARATION:
1. In a medium bowl, stir together the eggs, mayonnaise, mustard, horseradish, red onion and crumbled bacon.
2. Season with salt and pepper to taste. Serve immediately, or refrigerate until serving.
