Just Peachy Cheesecake by Divya Gugnani

Makes 12 to 16 servings

INGREDIENTS:

Crust:
1 cup graham cracker crumbs
1/4 cup sugar
1 tablespoon butter, melted

Filling:
12 oz low-fat cream cheese, softened
1 c light brown sugar
1/2 teaspoon vanilla extract
2 eggs
1 ΒΌ c peach jam
1 peach, sliced

PREPARATION:

1. Preheat oven to 350 degrees F.

2. To make crust, combine the graham cracker crumbs with the sugar and butter in a medium sized bowl. Mix well and place in the bottom and sides of an 8-inch springform cake pan. Make sure to press against the sides and bottom of the pan. Set crust aside.

3. Beat the eggs and cream cheese together with an electric mixer. Add the sugar and vanilla and continue beating until well blended. Add 1/4 cup peach jam and mix and mix well.

4. Pour mixture into prepared crust and bake for 35 to 40 minutes. Remove from oven and let cool for 10 minutes.

5. Remove cake from oven and top with remaining 1 cup peach jam. Garnish with peace slices. Cool to room temperature and then refrigerate overnight.
