Behind the Burner: Honey Walnut Delight by Divya Gugnani

Makes 6 servings

INGREDIENTS:

2 Cups (8 oz.) walnuts
3/4 cup honey
3/4 cup (4 oz.) dried pears, diced
2 tsp. mixed Italian herbs
2 tbsp. finely-grated orange zest
2 tsp. pulp-free orange juice
1 tsp. lemon juice
1 tsp. sea salt
12 slices baguette French bread, cut diagonally, about 1/2 inch thinck
4 oz. plain goat cheese


PREPARATION:

1. Preheat the broiler of your oven.

2. Coarsely chop 1 Cup of the walnuts, then chop the remaining cup of walnuts finely. Place all nuts in a large bowl, add the honey, dried pears, Italian herbs, orange zest, orange juice, lemon juice, and salt. Blend until completely mixed; set aside.

3. Slice baguette on the diagonal into about 12 slices and place on a baking sheet.

4. Cut the goat cheese into pieces; divide and place on top of the baguette slices. Using a knife, spread cheese uniformly on each baguette slice.

5. Broil sliced 4 inches from heat until cheese is just melted. (This takes just a moment to soften the cheese).

6. Top each baguette slice with a spoonful of honey walnut spread and serve.
