Harvest Bisque with Smoked Duck and Roasted Pumpkin Seed Oil by D'Artagnan
Makes 4-6 servings
INGREDIENTS:
2 sweet potatoes, peeled and diced
1 butternut squash, peeled and diced
1 Spanish onion, peeled and diced
1/2 stalk of celery
2 carrots, peeled and diced
1 quart of chicken broth
4 oz. of heavy cream
1/4 D'Artagnan smoked duck breast
salt and pepper and honey to taste
Roasted pumpkin seed oil, for drizzling
PREPARATION:
1. Place all prepared vegetables in a large pot and cover with chicken broth.
2. Simmer for 20 minutes, or until tender. Blend with immersion blender.
3. Stir in honey and cream. Place in bowls, drizzle with pumpkin seed oil, and top with duck.
