Grilled Chesse (Smoked Mozzarella and Basil Pesto) by Tyler Florence

Makes 2 servings

INGREDIENTS:

4 slices white sandwich bread
4 slices smoked mozzarella
1 garlic clove
2 Tablespoon unsalted butter
freshly ground black pepper

Basil Pesto:
2 Cups fresh basil
1 Cup fresh Italian parsley
1/2 Cup Parmigiano Reggiano cheese
1/2 Cup pine nuts, toasted
3 garlic cloves, roughly chopped
1/4 teaspoon kosher salt
1/2 Cup extra virgin olive oil

PREPARATION:

Pesto sauce:

1. Combine pesto ingredients in a food processor and pulse until well combined but still has a rough texture.

Sandwich Preparation:

1. Spread insides of bread slices with pesto.

2. Lay one slice of mozzarella on one side of bread and season with a few turns of fresh pepper.

3. Place second slice on top of the mozzarella forming a sandwich. Repeat for second sandwich.

4. Set a large sauté pan over medium heat and add butter. Brown garlic first to infuse butter and remove.

5. Add sandwich and cook 2-3 minutes per side until golden brown and crispy.

6. Remove from pan and enjoy.
