Behind the Burner: Gnocchi by Violetta Bitici

Makes 8 servings

INGREDIENTS:

2 pounds boiled yukon gold potatoes
1/2 pounds all purpose flour
1 egg
Salt to taste
ground nutmeg to taste
4 Tablespoons Parmesan cheese




PREPARATION:

1. Peel potatoes. Rice with a ricer.

2. Mix with flour, salt nutmeg and cheese.

3. Knead well. Shape into moons, long snakes, circles or any shape you prefer.

4. Boil for 3 to 5 minutes or until the gnocchi rises to the surface.

5. Serve with your favorite sauce.
