Garlic Confit by Chef Lucas Billheimer
INGREDIENTS:
1 head of garlic
Canola oil
1/4 tbsp. rosemary
1/4 tbsp. thyme
PREPARATION:
1. Break up head of garlic into cloves. Cover garlic cloves with canola oil in sauté pan.
2. Add rosemary and thyme and poach until garlic is soft, about 25 minutes. Garlic will be soft and buttery and will emerge out of its skin easily.
