Behind the Burner: Evil Auntie's Chocolate Fudge by Robin McCain

INGREDIENTS:

1 1/2 cups dark chocolate chips
1/4 cup butter
1/2 cup sugar
1 oz. Canadian whiskey

PREPARATION:

1. Pour the chocolate chips into a Pyrex pan

2. Microwave chocolate chips 1 minute

3. Add butter and microwave 1 minute more

4. In separate bowl, use whiskey to dissolve sugar

5. Stir all together and microwave 1 minute

6. Beat with hand mixer for a smooth even texture

7. Enjoy hot - or cool, cut and refrigerate

Options for butter, sugar & whiskey:

Less butter and more sugar raises the melting point so it doesn't need refrigeration. More whiskey makes it easier to dissolve the sugar as well as give more of a buzz. Over the years I have reduced the amount of butter and increased the amount of sugar. We're still talking about something in the range of 140 to 160 calories/oz. - after all, this is Original Sin!
