Everything Fries by Chef Will Savarese

Makes 2 servings
INGREDIENTS:
2 Idaho potatoes
Oil for deep frying (preferably peanut)
1 tsp. poppy seeds
1 tsp. garlic powder
1 tsp. onion powder
Kosher salt to taste
PREPARATION:
1. Peel the potatoes and cut into 1/2 inch sticks.
2. Soak the fries in ice water for about 30 minutes to remove excess starch.
3. In a deep fryer or Dutch oven, heat the oil to 325 degrees F.
4. Working in small batches, fry the potatoes for about 3 minutes in order to cook the inside of the potatoes. Drain on paper towels and set aside.
5. Before serving, reheat the oil to 350 degrees F and fry the potatoes in small batches until golden brown.
6. Drain on paper towels and season with the poppy seeds, garlic powder, onion powder and salt while still hot. Serve immediately.
