Egg Salad by Divya Gugnani
Makes 1-2 serving
INGREDIENTS:
3 large eggs
1/2 red onion, diced
1 tomato, diced
1 Tablespoon capers
2 Tablespoons mayonnaise
pepper to taste
PREPARATION:
1. Hard boil two eggs, discard the yolks.
2. Roughly chop egg whites.
3. Combine egg whites, capers, diced onion, diced tomato with 2 tablespoons of mayonnaise.
4. Add pepper to taste.
