Edamame Hummus by Nancy Sobel

INGREDIENTS:
3 cups shelled edamame, cooked according to package directions
1/2 cup almonds
1 shallot
2 cloves garlic
1 inch piece of ginger, chopped
2 tbsp. sesame or olive oil
2 tsp. soy sauce
1 tsp. rice vinegar
salt to taste if needed
PREPARATION:
1. Blitz it all in a food processor until smooth and serve with crackers and vegetables, stirred into brown rice, or whole wheat pasta.
